Did you notice that most veggie burger recipes, we stumble upon online, are almost 100% beans? We add beans to this recipe, but they are far from the star. (If you are looking for a simple black bean burger recipe, however, here is our favorite version. They are so easy!)

Meat is hard to imitate and to be honest, I think it defies how truly delicious vegetables can be. These meatless burgers take hold when cooking, fit well on the burger bun, and do not take out the sides when you bite. Most importantly, they are delicious.

Nobody gets around the fact that vegetable burgers take longer to make than regular hamburgers, but they are worth it (trust).
There is nothing difficult about the process, so stay with us. you can do this!
The rule when it comes to making a great meatless burger - get rid of excess moisture. It is this excess moisture that causes some vegetable or bean burgers to sniff so easily in between. We deal with it in two ways:
Roast the vegetables until caramelized and excess moisture evaporates. We first cut the vegetables into small pieces and then fry them.
Fry the beans for about 15 minutes so that they open and separate slightly (see photo below).
Fry the beans until they open and look dry, reducing the moisture in the burger, which makes for a better veggie burger.

When we first made this recipe, we called for eggs to help tie the burger together. They act like a charm, but since sharing these burgers with you, many of you have asked about making them vegetarian.
Flax eggs are perfect in this recipe! They help people making binders and burgers. Here's what you need to make these veggie burgers:
Use 2 hemp eggs instead of 2 eggs called for in the recipe. (Readers have commented that chia eggs work, as well. We have not tried this yet.)
To make 2 flax eggs, take 2 tablespoons of flaxseed meal with 6 tablespoons of water. Set the mixture aside for 5 to 10 minutes and then use it in the recipe below.
Make further tips
Once you make the burger mixture, you can keep it in the fridge for twenty hours. Or you can make patties, cook them and freeze for up to three months (this is what we do).
Cooking veggie burgers
Burger cooking is simple. Use a skeleton over medium-low heat. You can do this on the stovetop or on the grill. (If you are grilling, we still recommend using a cast-iron skillet or grill).
These are also vegetable burgers after all, so take care when you handle them. They hold up well, but it is best to use a soft touch when moving or turning them around.
