hit oh I'm Anita and today we're going
to show you how to make couscous salad
it's a great summer salad really
good but you know honestly
you can have it any time here it's a
great lunch and I think yes light lunch
and very simple to make so here we have
one cup of couscous and couscous is like
a pasta's like little small granules
and you can get it in packages or if you
go to one of those health food stores
they have it in the big bins too you can
pick up as much as you like and to this
we're going to add half a teaspoon of
salt and one and a half cups of boiling
water so we just heated the water in
the microwave and you can use a stovetop
if you like and mix it well just enough
for the salt to dissolve and you're
going to cover it with a tight lid and
just leave it aside for about 10 minutes
and meanwhile, you get the vegetables
chopping so it's been 15 minutes let's
have a look Wow yeah it has increased
quite a bit in size and quantity look at
and what you're going to do is just take
a fork and just fluff it up I love
working with couscous don't you it's
like one of the easiest things you don't
have to cook it just pour the water and
let it go yeah so easy and it's good for
you I give just for a change I
give it to my kids with a rajma or dal
they just you know get a kick out of it
just make sure it's all fluffed up and
it's not sticking so what we're going to
do is we're going to transfer it into
another bigger bowl and first of all
it'll help it cool down faster and also
we're going to have our vegetables all
prepped up so you want it to be
cool before you add the
vegetables otherwise the vegetables will
you don't want them you want them to
retain their crunch sir couscous has a
cool down and we created a little bit we
just kept it in the refrigerator for a
little bit show it would cool faster but
you know that's a great time-saving tip
but it is ready to work with now it's
still nice and fluffy and meanwhile what
we did was we work started working on
the veggies and got them all prepped up
look how beautiful that looks
again a lot of this is to taste and you
can tailor-make it or customize it to
your you know desire you've got some
spring onions or green onions over here
we've chopped we've got some orange bell
pepper now you can have the red yellow
pink green purple whatever you find and
then you've got some cucumber if of
course these the regular ones we've
so we peel them and then chop them if
you're using English cucumber of course
you don't need to do that and then you
have cilantro mmm chopped fine we've got
some grape tomatoes you can use grape
tomatoes or any of the tomatoes just
make sure their little form as opposed
to be very soft and of course green
chilies to taste so we're making this
couscous salad as a good healthy
lunch option for us but it's such a
a wonderful thing to serve at parties and
you know potlucks and things like that
make sick mix so if you want
to do it for that then you can take some
olive oil just a couple of teaspoons and
drizzle it over the couscous at this
the point we're choosing not to do it of
course but it adds a nice flavor
and it kind of keeps all the grain
separated and nice if you're serving it
at a later time okay so and go all that
all the things a few sprigs of green
onions half a bell pepper this is all
approximation and we love the crunch of
cucumbers but you can put half or
another one even zucchini is a good
substitution and cilantro and
tomatoes yummy here's our green choice
and we have some garbanzo beans this is
a really good addition to the salad
because it kind of makes it a little
heavier than it is and if you're using
it for lunch it takes you through so
we've used one can we've drained it and
rinsed it out but if you want to soak it
and you know to go that method then that's
okay tights Oh excellent
looks so good and do this we can you get
some dried cranberries or you can put
raisins and it gives a very good you
know the little sour effect and a little
sweet so you can put as much again as
little as you like but I love
cranberries and they look so pretty here
it does we also have some chopped
walnuts again you can use you know
whatever not that you like but we love
walnuts in this so just roughly chopped

going to put some lime or lemon juice

just so many different flavors and
textures in there and of course
everything is cooked so you can try it
at any point in time and adjust your
salt or lime juice so this is ready
